Course 1
Insalatina di Mare al limone
Steamed calamari, cod-fish, octopus, shrimp seasoned with celery, carrots and lemon emulsion
Paired with:
Terredora Greco di Tufo 2020 (Campania)

Course 2
Lumache alla Calabrese
Slowly braised escargots with onion, garlic and Calabrian pepper in a tomato sauce served over toasted bread
Paired with:
Statti Gaglioppo 2020 (Calabria)

Course 3
Cavatelli Agnello e Stracciatella
Cavatelli pasta sauteed with lamb shank sauce cooked overnight, Stracciatella creamy cheese and EVOO
Paired with:
Leone de Castris Salice Salentino Riserva 2016 (Puglia)

Course 4
Arrosto agli aromi di Sicilia (I came up with the Italian name, take it out if not agreed)
Oven Roasted Beef Tenderloin flavored with Sicilian Oregano served over eggplant puree and roasted baby potatoes

Feudi del Pisciotto Nero D’Avola Versace 2019 (Sicilia)

Cannoli siciliani al Pistacchio di Bronte
Cannoli filled with sweet ricotta flavored with Bronte Pistachio
